A lo largo de 8 a\u00f1os, colaboraron con varios cient\u00edficos y universidades para desarrollar ESTAAN, un sustituto vegetal del sulfito completamente natural. El principal requisito para su uso en el vino era garantizar que todas las caracter\u00edsticas, incluido el sabor, permanecieran inalteradas.
